Description:

Students explore the central place of food harvesting, cooking, and eating across human history and cultures. Students in this course examine topics such as the cultural meaning of food, subsistence strategies across cultures, food security and food sovereignty, the globalization and industrialization of food systems, and Indigenous foodways.
